Pecan Crescents
1 cup butter, softened
3/4 cup butter
1 1/2 tsp almond extract
2 1/2 cups flour
1 cup ground pecans
1 cup confectioners' sugar
In a large bowl, cream the butter and sugar until light and fluffy. Beat in the extract. Gradually add the flour to the creamed mixture. Mix well. Stir in the pecans. Shape the teaspoonfuls of dough into crescents. Place 2 inches apart on ungreased baking sheets. Bake at 300 F for 18-20 minutes or until firm. Roll the warm cookies into the confectioners sugar. Cool on wire racks. Makes 9 dozen
