Friendship Stew

2 pounds ground beef
4 one-pound cans Italian-style crushed tomatoes
2 medium white or yellow onions
4 large potatoes
1 one-pound can yellow corn
1 one-pound can green beans
1 8 ΒΌ -ounce can sliced carrots
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon crushed oregano
1 six-ounce package frozen green peas

Brown the ground beef in a medium skillet; drain and set
the meat aside. Place canned tomatoes in a four-quart stock
pot. Peel and coarsely chop onions and potatoes; add to
tomatoes. Add browned beef and remaining ingredients,
except for the peas. Bring stew to a boil; reduce heat.
Simmer stew slowly for 40 minutes or until potatoes are
tender. Add peas and cook five minutes longer. Serve
the stew with dinner rolls or cornbread. Serves about 8.

Note: This is a versatile recipe; it's important to have the
canned tomatoes, but if one of the other ingredients is
missing, the stew will still be delicious. It can even be
made without the meat.
