Whoopie Pies
1 cup butter, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla
4 cups flour
3/4 cup baking cocoa
2 tsp baking soda
1/2 tsp salt
1 cup water
1 cup buttermilk
For The Filling:
2 cups confectioners' sugar
2 cups marshmallow creme
1/2 cup butter, softened
2 tsp vanilla
In a large bowl, cream the butter and the sugar until light and fluffy.. Add the eggs and the vanilla. Mix well. Combine the flour, cocoa, baking soda, and salt. Add to the creamed mixture alternately with the water and buttermilk. Beat well after each addition. Drop by tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 375 F for 5-7 minutes or until set. Remove to wire racks to cool. In a small bowl, beat the filling ingredients until fluffy. Spread on the bottoms of half of the cookies. Top with the remaining cookies.
