Pastelitos de Boda
3/4 cup butter, softened
1/2 cup confectioners' sugar
2 tsp vanilla
2 cups flour
1/4 tsp salt
1 cup finely chopped walnuts
1/4 cup heavy whipping cream
Additional confectioners' sugar
In a large bowl, cream the butter and the sugar. Add the vanilla.. Combine the flour, salt, and nuts. Gradually add to the creamed mixture. Add the cream. Knead lightly. Shape into a roll 2 1/2 inches in diamter. Wrap in the plastic wrap. Refrigerate for several hours or overnight. Unwrap and cut into 1/4 inch slices. Place 2 inches apart on ungreased baking sheets. Bake at 375 F for 15 minutes or until delicately browned around the edges. Remove to wire racks. While warm, roll in addditional confectioners' sugar.
