Jelly Drop Cookies (Thumbprints)
Jelly Drop Cookies (Thumbprints)
These taste like shortbread.
Ingredients
1/2 c. flour
1/2 c. white sugar
1 egg
1 tsp. baking powder
3/4 c. cornstarch
3/4 c. all-purpose flour
1 tsp. vanilla
Pinch of salt
Jam or jelly to fill cookie
Directions
Combine all ingredients, except jam. Drop small balls of dough onto greased cookie sheet. Flatten slightly. Make an impression in the center of each cookie with your thumb. Fill with jam or jelly (about 1/2 tsp.). Bake in a 375-degree oven for 7-8 minutes. Cool slightly on pan before removing to cooling rack.
