Cranberry Crisps
1 cup butter-flavored shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups old-fashioned oats
2 cups flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking powder
1 1/3 cups dried cranberries
1 cup coarsely chopped walnuts
In a large bowl, cream the shortening and both of the sugars until light and fluffy. Add the eggs, one at a time. Beat well after each addition. Beat in the vanilla. Combine the oats, flour, baking soda, cinnamon, salt and the baking powder. Gradually add to the creamed
mixture. Mix well. Stir in the cranberries and the walnuts. Drop by tablespoonfuls 2 inches apart onto lightly greased baking sheets. Bake at 350 F for 12-14 minutes or until lightly browned. Remove to wire racks to cool. Makes 5 dozen
