3/4 cup onion, chopped
3/4 cup green bell pepper, chopped
1/2 cup sliced mushrooms
1/2 cup sliced zucchini
1 large garlic clove, minced
3 Tbsp oil
6 eggs, beaten
1/4 cup cream
8 oz cream cheese, diced
1/2 cup shredded Cheddar cheese
2 cups cubed white bread
1 tsp salt
1 tsp pepper
1 Tbsp fresh basil or 1/2 Tbsp dry Basil
Preheat oven to 350 degrees. Grease 10-inch Springform pan.
Saute vegetables and garlic in oil until zucchini is tender. Cool
slightly.
Beat eggs with cream. Add cream cheese, Cheddar, bread, salt, pepper,
basil and vegetables. Mix well and pour into prepared pan.
Bake at 350 degrees for one hour or until set in center. Let stand
10 minutes before cutting. Pour salsa over it if you like.
