QUICK BEEF AND BEANS SOFT TACOS
QUICK BEEF AND BEANS SOFT TACOS
Ingredients
10 ounces Laura's Lean Strip Steak
1/2 teaspoon ground cumin
1 teaspoon chili powder
3 cloves garlic, minced
1 teaspoon olive oil
2 cups cooked black beans, well-drained
1 cup prepared picante sauce or salsa
1/2 cup finely chopped onion
1 cup shredded lettuce
3 ounces grated reduced fat cheddar cheese
1 cup finely chopped tomato
8 soft corn tortillas
Directions
1. Slice beef into thin shreds and place in shallow glass bowl.
2. Combine cumin, chili powder, garlic and oil. Pour over meat and toss to coat. Set aside while preparing beans, toppings and tortillas.
3. Stir-fry beef over medium high heat. Add drained beans and half of the salsa.
4. Keep warm while heating tortillas.
5. Spread each tortilla with 1/8 of the beef and bean mixture. Top as desired and enjoy.
Makes 4 servings.
Cooking Tips: When stir-frying, add only enough oil to coat meat being cooked.
If you add too much, the stir fry tends to be greasy.
Cook a small amount of meat at a time.
If you cook too much meat at once, it will cool down your skillet.
You want your skillet to stay good and hot so the meat browns.
If it cools down, you'll end up with water in the skillet which will steam the meat.
