Brazil Nut Cookies
Brazil Nut Cookies
1 cup butter, softened
1 cup sugar
2 eggs
1 1/2 tsp vanilla
2 1/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
2 cups chopped Brazil nuts
1/2 cup flaked coconuts
In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time. Beat well after each addition. Beat in the vanilla. Combine the flour, baking soda, and salt. Gradually add to the creamed mixture and mix well. Stir in the nuts and the coconut. Drop by tablespoonsful 3 inches apart onto ungreased baking sheets. Bake at 350 F for 10-12 minutes or until the bottom of the cookies are lightly browned. Remove to wire racks to cool completely. Makes about 4 1/2 dozen
