Apple Snack Cake
Apple Snack Cake
1/2 cup butter, softened
1/2 cup packed brown sugar
3 eggs
1 tsp vanilla
1 pkg. (15.4 oz.) nut quick bread mix
1 tsp ground cinnamon
2 medium tart apples, peeled, and finely chopped
1/2 cup raisins
Icing:
3/4 cup confectioners' sugar
1/4 tsp ground cinnamon
2 tbsp butter, melted
1/4 tsp vanilla
3 to 5 tbsp milk
In a large bowl, cream the butter and brown sugar until light and fluffy. Beat in the eggs and vanilla. Add the quick bread mix and cinnamon. Beat until combined. Fold in the apples and raisins. Transfer to a greased 13 x 9 inch baking dish. Bake at 350 F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. In a small bowl, combine the confectioners' sugar, cinnamon, butter, vanilla, and enough milk to achieve the desired consistency. Drizzle over the cake.
