Apple Bread Pudding

1/4 cup butter, cubed
2 cups chopped peeled tart apples
1/3 cup packed brown sugar
8 cups cubed French Bread
1/2 cup butterscotch chips
1/2 cup cinnamon baking chips
1/2 cup chopped walnuts
4 eggs
3 cups half-and-half cream
1 tsp vanilla
Additional cinnamon baking chips, melted, optional

In a large skillet, melt the butter. Stir in the apples and the brown sugar. Cook over medium heat for 6 to 7 minutes or until the apples are tender, stirring occaionally. Place the bread cubes in a greased 13 x 9 inch baking dish. Add the apple mixture, chips, and the walnuts. Toss to coat. In a large bowl, whisk the eggs, cream, and vanilla. Pour over the bread mixture. Bake at 350 F for 40-45 minutes or until a knife inserted near the center comes out clean. Drizzle with the melted cinnamon chips if desired. Serve warm.
