Sweet Potato Souffle
Sweet Potato Souffle
Serves 8
3 cups mashed sweet potatoes
1/2 cup milk
dash of salt
1/3 stick margarine
1 cup of sugar
2 eggs, beaten
1 tsp. vanilla
Topping:
1 cup packed brown sugar
1/2 cup self-rising flour
3/4 stick margarine softened
1 cup chopped pecans
Preheat oven to 350 degrees. Combine all ingredience (not topping ingredience) and pour into 11" x 13" baking dish. Mix all topping ingredience together and sprinkle over top of sweet potatoe mixture. Bake at 350 degrees for 25 to 35 minutes.
