Southwestern Pumpkin Stew

1 c. chopped onion
1/2 c. sliced carrot
1 Lb. boneless, skinless chicken breasts, cut into 1" pieces
1 T vegetable oil
1 c sliced celery
1/2 c red bell pepper, cut into 1" pieces
1 3/4 c. solid pack pumpkin
1 3/4 c. chicken broth
1/2 c. sour cream
1 1/4 c. hominy
3 T chopped cilantro
1/2 t. salt
1/2 t. ground black pepper
1/2 t. dried oregano leaves
1/2 t. ground cumin
1/8 t. ground nutmeg

Saut?onion, carrot & chicken in oil in 3 qt. heavy-duty saucepan, over med-hi heat; cook until chicken no longer pink. Add celery & red pepper; saut?for 3-4 min. or until vegetables are crisp-tender. Stir in pumpkin, chicken broth, sour cream, hominy, cilantro, salt, pepper, oregano, cumin & nutmeg. Simmer over low heat for 10-15 min.
6-8 servings.
