Mango Papaya Salsa
Mango Papaya Salsa
2 ripe, firm mangoes
1 sweet onion, chopped
1 red pepper, chopped
1/2 green pepper, chopped
1 small jalapeno, seeded and minced
2 cloves garlic, minced
6 Tbsp. fresh lime juice
1 ripe papaya
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. chopped cilantro
1 tsp. minced lime peel
Seed and peel the papaya, peel mangoes and cut flesh from pit-cut into 1/4 inch dice. Mix onions, peppers, garlic, lime peel, lime juice, cilantro, salt and pepper. Stir well. Add papaya and mango, toss gently. Chill covered at least 2 hours and up to 24 hours.
