Insalata Caprese

12 oz mozzarella cheese
12 fresh basil leaves
1 lb cored and thinly sliced tomatoes
1/3 cup extra virgin olive oil
salt and freshly ground black pepper to taste

On a platter or individual serving plates, alternate cheese slices,
basil leaves and tomato slices. Season with salt and pepper and
drizzle oil on top. Cover and let stand at least 30 minutes before
serving. Serves 4 to 6.
