Potato Chip Cookies

Potato Chip Cookies

1/2 cup plus 2 tablespoons butter
1/3 cup sugar
1 teaspoon vanilla
3/4 cup flour
3/4 cup coarsely crushed potato chips

Preheat oven to 350 degrees. Lightly grease 2 cookie sheets. Cream butter. Blend in sugar until completely mixed. Add vanilla. Mix thoroughly. Gradually add flour. Mixing well after each addition. Hand stir in potato chips. Drop by teaspoon onto prepared cookie sheets. Bake for 10 minutes. Cool Potato Cookies completely on pans. Makes approximately 3 dozen Potato Chip Cookies.
