Spanish Rice

Amount Measure Ingredient -- Preparation Method

1 onion -- chopped
1 green pepper -- chopped
1/4 cup celery -- diced
14 ounces tomatoes -- chopped
1 tablespoon tomato paste
1 tablespoon ketchup
3 cups rice -- cooked
4 bacon slices -- cooked
4 tablespoons margarine -- melted
2 teaspoons salt
1/8 teaspoon white pepper
1/4 cup Cheddar cheese -- grated

Cook onion, green pepper and celery in melted margarine until tender. Add chopped tomatoes, tomato paste, tomato ketchup, salt and pepper. Cook 15 minutes and add 3 cups hot cooked rice. Sprinkle 4 crumbled slices bacon on top. Garnish with 1/4 cup grated cheddar cheese. Serves 8
