APRICOT MINI LOAVES

APRICOT MINI LOAVES
Ingredients
l egg lightly beaten
6 T milk
5 T melted butter
5 T honey
l/2 tsp vanilla
l/2 tsp cinnamon (optional)
l cup pancake mix, any brand
l/4 cup each nuts, dried apricots and raisins
Directions
Lightly beat egg.
Add and mix in milk, butter, honey, and vanilla.
Add pancake mix and stir until smooth.
Fold in fruit and nuts, pour into 2 mini loaf pans
sprayed with nonstick spray.
Bake at 350 degrees for 30 minutes or until done
