BROWN SUGAR CORNBREAD MUFFINS

1 1/2 cups cornmeal
1/2 cup all-purpose flour
1/4 cup dark brown sugar, packed
4 tsp baking powder
1/2 tsp salt
1 cup milk
1 egg, beaten
1/4 cup (1/2 stick) melted butter or margarine

Preheat oven to 425 degrees. Grease 12 muffin pan cups.

Mix together cornmeal, flour, sugar, baking powder and salt; set aside.

Combine milk, egg, and melted butter. Add to cornmeal mixture. Stir to mix just until moist. Fill prepared muffin pans 2/3 full.

Bake in 425 degree oven 20 minutes until muffins are golden brown.
Makes 12 muffins
