Caramel Cranberry Bars

1 pkg (12 ounces) fresh or frozen
cranberries, thawed
1 pkg (8 ounces) chopped dates
3/4 cup chopped pecan
2 tbsp plus 1/2 cup sugar, divided
2 1/3 cups flour, divded
2 cups old-fashioned oats
1/2 cup packed brown sugar
1/2 tsp baking soda
1 cup butter, melted
3/4 cup caramel ice cream topping

In a small bowl, combine the cranberries, dates, pecans, and 2 tablespoons of sugar. Set aside. In a large bowl, combine 2 cups of flour, oats, brown sugar, and the remaining sugar. Stir in the butter. Set aside 1 cup of the topping. Press the remaining crumb mixture into a greased 13 x 9 inch baking dish. Bake at 350 F for 15 minutes. Meanwhile, place the remaining flour in a small bowl. Stir in the caramel topping until smooth. Set aside. Sprinkle the cranberry mixture over the crust. Drizzle with the caramel mixture. Sprinkle with the reserved crumb mixture. Bake for 30-35 minutes or until golden brown and bubbly. Cool on a wire rack. Makes 2 dozen
