Mediterranean Wraps
4 eggs, scrambled
4 large pocketless pitas
8 tbsp feta cheese, crumbled
16 kalamata olives, chopped
4 tsp fresh oregano, chopped
Scramble the eggs in a large skillet. Place a quarter of the scrambled eggs on top of each pita. Top with feta cheese, olives, and oregano. Fold the pita over. Cut in half. Repeat with the other pitas. Makes four servings
