Carrot Spread Surprise
1 (8 oz) package cream cheese, softened
4 small carrots, grated
1 cup ground pecans
1 tablespoon finely chopped onion
1/4 cup mayonnaise
salt and pepper to taste
In a medium bowl, thoroughly blend cream cheese, carrots, pecans, onion, and mayonnaise. Season with salt and pepper. Cover, and refrigerate until serving. Makes 16 servings
