Penne with Hazelnut Pesto

2 Servings of cooked Penne pasta

1 TSP Salt

2 TBSP Chopped/Crushed Hazelnuts

1 Clove Garlic

¾ Cup Spinach – fresh leafs

3 TBSP Olive Oil

2 TBSP Grated Parmesan

1 TBSP Lemon Juice

1 TSP Pepper

Hazelnuts are dry roasted in non stick pan, than set aside and kept warm.

Prepare Garlic than add in to a food processor with Spinach, hazelnuts and garlic.

Slowly add Olive Oil while processing; add Parmesan Cheese and Lemon juice.

When all blended smooth season with Salt and Pepper before serving over

cooked Penne pasta.

Serves 2 – 3
