Southwest Salad


8 oz mozzarella cheese
1 can (15 oz)each garbanzo beans, black beans, rinsed, drains
1 can (15 oz) red kidney beans, rinsed and drained
1 cup each cherry tomatoes, halved; green onions, sliced
1 red or yellow sweet bell pepper, chopped
1/4 cup each chopped cilantro, fresh lime juice
2 cloves garlic, minced
3/4 cup Italian dressing
1 tbsp chili powder


Cut cheese in small chunks. Combine with remaining ingredients in a 1-qt. bowl. Refrigerate 2 hours (up to 2 days). Keep chilled until serving time. Makes 6-8 servings
